Again, I was in charge of dinner. And, as par usual, I had very few ingredients at my disposal. Here we go!
Large skillet over high heat.
about two tablespoons olive oil
garlic salt, basil, crushed rosemary, fresh ground pepper (at will)
three large carrots, peeled and sliced.
fourth cup of yellow onion
green pepper (i only had 1/4th, so you could probably use more)
Jalepeno
cook until soft.
remove with slotted spoon
cut some chicken into cubes. I had two big breasts. No laughing.
put into same skillet. maybe add some oil
cook until done.
make some slinky egg noodles to go with it.
The best part about this recipe is that it is easily adaptable for numbers. More people? More chicken and noodles. Instead of having the veggies as a big side dish, you could mix it into the noodles. Very simple. I love it.
