7/2/12-World's Easiest Pot Pie
I was responsible for Sunday dinner. I also wanted to go for a nice long swim though. So, I decided to find something easy to make.
Here's what you need:
2-3 large chicken breasts
A package of frozen mixed veggies
12ish canned biscuits
2 cans cream of mushroom soup
Spices of your choice (I chose thyme, rosemary, and sage)
Cube chicken and bake until done. About ten minutes depending on your cube size.
Combine the soup, veggies, and chicken in a baking safe bowl. Anything that fits the size of your concoction.
Cover and bake at 400' F Or until thoroughly warmed. You may need to mix it halfway through to distribute heat.
Uncover and peel biscuits onto the top. Don't make the mistake (that I made) of putting them too close together. It will disallow them to bake well. Put back in oven and cook until biscuits are cooked and golden brown.
I give this a 6 on the sunshine scale. It is SO easy, but I just didn't love it. I don't think I picked very good mixed veggies. I'll for sure be making this one again though. Maybe in the future it will score higher.
